Paleo Carrot Muffins


2.5 cups of almond flour

1 cup of carrot

1/2 cup of mashed banana (or apple sauce)

3 eggs

1/4 cup melted coconut oil, plus some to grease muffin tin

1/4 cup honey or maple syrup

1/2 tsp baking soda

1/2 tsp vanilla

1/2 tsp cinnamon

1/2 tsp sea salt


Mix all dry ingredients together and mix all wet ingredients together, then combine them. Use some extra melted coconut oil to grease muffin tin. Bake in oven at 350 degrees for 20 to 25 minutes.

Grease muffin tin with coconut oil:


Fill each hole up 3/4 of the way. Any empty hole, fill with some water:
