Italian Meatball Soup

1 lb ground beef made into mini meat balls
1 leek or 1 medium onion diced (use leek if you have SIBO)
½ green cabbage thinly sliced
1 head of celery diced
2 small zucchinis (or 1 large) cut into bite size pieces 1 small package of spinach
Handful of fresh parsley chopped (optional)
1 large can of tomatoes
1 tbsp of Italian seasoning (or make up a blend of oregano/basil/thyme)
1 tbsp of ghee or other cooking oil
Beef broth (ideally homemade, and if not organic boxed. Enough to cover vegetables – buy 1-2 large cartons)
Sea salt and pepper.

Heat large soup pot on medium high
Put in oil of choice – add onion or leek and brown
Add rest of vegetables and brown for a few minutes

Add in broth to cover vegetables and spices
Bring to a boil. While you are waiting, make the mini meatballs
Once your soup comes to a boil add in mini meat balls and let simmer until cooked through
Add spinach and can of tomatoes
Turn off heat once spinach is cooked and stir in parsley
Season with salt and pepper to taste.
