Healthy Herb Flatbreads (Paleo)

This is one of my favourite recipes. I can't believe that these taste so good without using any regular flour. They are soft and gooey the way a homemade fresh pita would taste.

1 cup almond flour

1/2 cup tapioca flour

1 tbsp avocado oil

1 tbsp fresh chopped basil (could also use dried)

1 tsp parsley

1/2 tsp dried thyme

1/2 tsp oregano

1/2 tsp garlic powder

1/2 tsp sea salt

1 egg

1/2 cup water

Mix all ingredients together

Preheat large pan to medium. Add some avocado oil to coat the pan. Make 2 flatbreads at a time - using 1/2 the batter. This will make you 4 flatbreads.

Wait until the batter starts to set and the bottom is the colour you want it. I like to have them a little browned on each side. Then flip. Cook for another few minutes until browned on other side.

Serve warm with curry, a greek dish or just eat plain. I have used these in replacement of bread to make sandwiches. They are very versatile.

Store covered on the counter for a few days.
