Dairy-Free Ranch Dressing

1 cup mayo (or Veganaise to make it egg-free/vegan)
1/2 cup coconut milk ( I used canned)
Handfuls of fresh herbs: dill, cilantro, parsley, chives
1/2 tsp of garlic and onion powder
** if you can’t eat garlic or onion substitute 1 tbsp of garlic infused oil (SIBO/Low Fodmap)
1 heaping tbsp fresh lemon juice
Salt and pepper to taste
Blend all ingredients in a food processor or blender
This recipe is delicious! I love creamy dressings and when you’re trying to reduce dairy or eat healthier, this is a great choice. Use for cobb salad, tacos, fish cakes, chicken wings, veggie sticks and much more.
