Chocolate Chunk Zucchini Bread (Gluten Free & Vegan)


This delicious zucchini bread is the perfect guilt free treat when you're craving something sweet! It's vegan, gluten and refined sugar free, and packed with sneaky fruit, veggies, and fiber for all the goodness without the blood sugar spike and crash of conventional baked goods.


INGREDIENTS


2 1/2 cups steel cut oats, blended into flour

1 cup mashed banana

1 cup finely grated zucchini (extra liquid squeezed out in a towel and loosely packed)

1 tsp baking soda

1/2 tsp cinnamon

3/4 tsp baking powder

3/4 tsp salt

1 1/2 tsp pure vanilla extract

1/3 cup plant based milk (I used almond)

1/4 cup maple syrup

1 1/2 tbsp apple cider vinegar

3/4 to 1 cup 85% dark chocolate, chopped into chunks



DIRECTIONS


1. Preheat oven to 350 degrees Celsius. Process the steel cut oats into flour using a high speed blender .


2. Add all the ingredients to a bowl and mix well to combine.


3. Grease a 9 by 5 inch stainless steel loaf pan and spread the batter evenly in the pan.


4. Bake for 35 minutes and then without opening the door, turn off the oven and leave the bread in the oven for another ten minutes. Allow to cool completely in the pan, run a knife along the edges to remove.
