10 Minute Meatballs with Hidden Veggies (Instant Pot)


Sauce:

1.5 jars of tomato sauce

1 package of mushrooms chopped

1/2 onion chopped

2 garlic gloves chopped

1 small box spinach


Meatballs:

1 pound ground beef (organic and grass-fed) - Could also use chicken or turkey.

1/2 cup almond flour

1 organic egg

1 tsp of following: Italian Seasoning, Onion Power, Garlic Powder

1/2 tsp sea salt and pepper


Chop all veggies

Heat Instant Pot to Saute Option.

Saute onions, mushrooms and garlic until browned

Season with salt and pepper

Add in tomato sauce and stir. Turn Instant Pot Off


In a bowl mix all the ingredients for the meatballs with your hands. Roll into balls and plop them into the sauce. Push them down into the sauce.

Screw on and seal lid on Instant Pot

Pressure Cook on High for 10 minutes.


Once Complete let the pressure go on it's own for 10 minutes, then release yourself.

Stir in spinach until wilted.

Serve over favorite noodles or vegetable noodles


When I was mixed in the spinach some of the meatballs fell apart which made the sauce even better and thicker!
